Alternative for eggs as prices continue soaring

Eggs are currently expensive. If you can find them in the store. According to the Bureau of Labor Statistics, the price of eggs increased by 49.1% between December 2021 and November 2022.

It’s due to a variety of issues, including a devastating bird flu outbreak, strong demand, and rising agricultural production expenses.

Substitute For Scrambled Eggs 

According to CDC estimates released on January 10, more than 57,800,000 birds in 47 states have either perished or been killed as a result of a bird flu virus infection since early 2022.

Although a hen cannot fly, egg costs are rising. Though prices are beginning to fall, Stephanie Klein of the Texas A&M Department of Poultry Science estimates that prices will not recover to normal levels until late August.

Sarah Whipkey, a registered dietitian, and nutritionist from Plant Potential discuss items that are strong in protein, inexpensive in cost, and yet palatable alternatives to eggs.

Whipkey believes that tofu is a good substitute for eggs in this traditional American morning dish.

“A cheap, good protein source is going to be tofu,” Whipkey said. “I know that kind of scares a lot of people, but you can actually crumble it and season it, and it’s honestly not that different from an egg.”

Tofu is abundant in protein and may be found for as little as $1 per package.

There are various egg replacements that bakers can employ to make delightful fluffy delights.

“As far as full plant foods, you can do flaxseed, chia seed, applesauce (or) mashed banana,” she said. 

In place of eggs, bakers can use a mixture of baking soda, water, and vegetable oil.

Try Plant-Based Food!

Egg inflation can be a terrific opportunity to experiment with a more plant-based diet. Though eggs are good in moderation, she claims there are lots of other options with more protein and fiber.

“About one in three Americans is fiber deficient,” she claims. She went on to say that plant meals are higher in fiber and lower in cholesterol and saturated fat. The exception is coconut oil, which is high in saturated fat.

Whipkey suggested dried chickpeas as a quick, low-cost, high-protein snack. When it comes to a more expensive healthy snack, she prefers Luna bars.
